Cocktail recipe The way ahead
- Place an ice sphere into a rocks glass
- Place 2 dried apricots, 2 dried plums into a mixing glass and muddle
- Pour in 2 oz of dark rum and let infuse for about 1 minute
- Add 0.5 oz of sugar syrup and 2 dashes of Angostura bitters
- Fill the glass with ice cubes and stir
- Strain into the rocks glass
- Top up with light beer
- Garnish with dried apricots and a piece of dried plum on a cocktail skewer
